Blanch hard vegetables like potatoes, cauliflower, and carrots for 3–5 minutes in salted water; drain and set aside ��.Sauté the base:
Heat oil in a pan. Add cumin seeds, let them splutter, then sauté onions until golden brown. Add ginger-garlic paste and green chilies; cook for 1–2 minutes ��.Add tomatoes and spices:
Mix in chopped tomatoes along with turmeric, red chili, coriander powder, and salt. Sauté until the oil begins to separate from the masala ��.Cook the vegetables:
Add all the vegetables (except peas and capsicum) to the masala. Cover and cook for about 10 minutes, stirring occasionally. Add peas and capsicum, cook for another 5–7 minutes until everything is tender ��.Finish and garnish:
Add garam masala and (optional) cream or a spoon of curd for a silky texture. Mix well and simmer for 2–3 minutes. Garnish with fresh coriander leaves ��.
